I used a 6" diamond coated blade. One of the cheap Menard's brand ones. I cut it wet to keep the dust down; which resulted in a grit shower while cutting.

So you're grinding away that layer, and replacing it with something natural (corn, beans, etc). I would concentrate the grinding in the main well of the molcajete, since that's where you'll be grinding most things.
